Ingredients

  • 1 clove garlic (chopped 0.9g carbs)
  • 1 tbsp fresh parsley (chopped 0.1g carbs)
  • 1 tbsp olive oil (0g carbs)
  • 100 g (1 1/3 cup) mushrooms (thinly sliced 3.6g carbs)
  • 200 g (2 cups) leek
Dairy & sauces
  • 2 tbsp double cream
  • 60 g (1/2 cup minus 1 tsp) cheddar grated (0.8g carbs)
Pantry & spices
  • a pinch of black pepper

Steps

  1. Step 1

    Heat the oil in a medium frying pan and add in the leeks and mushrooms. Fry on a medium heat for 5 minutes until the leek has wilted and the mushrooms have softened.

  2. Step 2

    Add in the garlic and cream and stir. Cook for 1 minute. Add in half the cheese and stir.

  3. Step 3

    Transfer the gratin to a heat-proof dish and sprinkle with the remaining cheese and the black pepper. Grill until the cheese melts and starts to go golden.

  4. Step 4

    Carefully remove from the grill, sprinkle with the parsley and serve.
