Ingredients
Serves 2- 1 clove garlic (chopped 0.9g carbs)
- 1 tbsp fresh parsley (chopped 0.1g carbs)
- 1 tbsp olive oil (0g carbs)
- 100 g (1 1/3 cup) mushrooms (thinly sliced 3.6g carbs)
- 200 g (2 cups) leek
- 2 tbsp double cream
- 60 g (1/2 cup minus 1 tsp) cheddar grated (0.8g carbs)
- a pinch of black pepper
Open in Supper to scale servings and turn this into a grocery list.
Steps
- Step 1
Heat the oil in a medium frying pan and add in the leeks and mushrooms. Fry on a medium heat for 5 minutes until the leek has wilted and the mushrooms have softened.
- Step 2
Add in the garlic and cream and stir. Cook for 1 minute. Add in half the cheese and stir.
- Step 3
Transfer the gratin to a heat-proof dish and sprinkle with the remaining cheese and the black pepper. Grill until the cheese melts and starts to go golden.
- Step 4
Carefully remove from the grill, sprinkle with the parsley and serve.
