Ingredients

Serves 4
Produce
  • 2 heads butter lettuce (washed, dried and divided OR 2 x 120g (4.2oz) bags of prepared butter lettuce leaves.)
  • 2 tbsp olive oil
  • 20 red or green seedless grapes (sliced in half)
  • 3 baby cumbers (sliced)
  • 4 tbsp apple cider vinegar (or red/white wine vinegar)
Dairy & sauces
  • 2 tbsp honey
  • 3 tbsp grated parmesan cheese
Pantry & spices
  • ¼ tsp black pepper
  • ¼ tsp salt

Steps

  1. Step 1

    First make the vinaigrette by adding all of the ingredients to a small bowl or jug and whisking together until combined. Put to one side.

  2. Step 2

    Place the lettuce leaves in a large salad bowl and add in the sliced cucumbers and grapes. Toss together.

  3. Step 3

    Drizzle over the vinaigrette and toss again to coat the leaves.

  4. Step 4

    Sprinkle over the parmesan and serve.
