
Butter Lettuce Salad

Ingredients
Serves 4- 2 heads butter lettuce (washed, dried and divided OR 2 x 120g (4.2oz) bags of prepared butter lettuce leaves.)
- 2 tbsp olive oil
- 20 red or green seedless grapes (sliced in half)
- 3 baby cumbers (sliced)
- 4 tbsp apple cider vinegar (or red/white wine vinegar)
- 2 tbsp honey
- 3 tbsp grated parmesan cheese
- ¼ tsp black pepper
- ¼ tsp salt

Steps
- Step 1
First make the vinaigrette by adding all of the ingredients to a small bowl or jug and whisking together until combined. Put to one side.
- Step 2
Place the lettuce leaves in a large salad bowl and add in the sliced cucumbers and grapes. Toss together.
- Step 3
Drizzle over the vinaigrette and toss again to coat the leaves.
- Step 4
Sprinkle over the parmesan and serve.
