  • 1 (20 ounce) can pineapple chunks, (drained and ¼ cup of juice reserved)
  • 1 medium sweet bell pepper, (chopped)
  • 1 small onion, (chopped)
  • ½ cup apple cider vinegar
  • 2 tablespoons cornstarch
  • Optional garnish: sliced green onions; toasted sesame seeds; crushed red pepper flakes

  • 1 cup ketchup
  • ¼ cup less-sodium soy sauce
  • 2 tablespoons cold water
Pantry & spices
  • 1 teaspoon garlic powder
  • ½ cup packed light brown sugar
Fats & oils
  • 1 tablespoon sesame oil
Other
  • 1 (32 ounce) package frozen fully-cooked meatballs ((about 66 meatballs))

Steps

  1. Step 1

    Place the frozen meatballs, pineapple, bell pepper, and onion in a slow cooker.

  2. Step 2

    In a medium bowl, whisk together the reserved ¼ cup of pineapple juice, ketchup, brown sugar, vinegar, soy sauce, sesame oil, and garlic powder.

  3. Step 3

    Pour the sauce into the slow cooker. Cover and cook on LOW for 4–6 hours or on HIGH for 2–3 hours, until heated through.

  4. Step 4

    In the last 30 minutes of cooking, whisk together the cornstarch and cold water in a small bowl. Stir the slurry into the slow cooker. Cover again and continue cooking until the sauce thickens.

  5. Step 5

    Stir well before serving. Garnish with green onions, sesame seeds, or red pepper flakes if desired.
