Ingredients
Serves 13- 1 tablespoon fresh lemon juice
- ½ cup extra-virgin olive oil
- 3 tablespoons apple cider vinegar ((or sub with sherry vinegar, red wine vinegar, white wine vinegar, or champagne vinegar))
- 2 teaspoons Dijon mustard
- 2 teaspoons honey
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- For serving: salad greens of choice

Steps
- Step 1
In a small bowl or large measuring cup, whisk together the vinegar, lemon juice, Dijon mustard, honey, salt, and pepper.
- Step 2
While continuing to whisk, gradually stream in the olive oil until all of the ingredients are completely combined. You can also use a jar with a tight-fitting lid to just shake together all of the ingredients. Taste and season with additional salt and pepper, if desired.
- Step 3
Drizzle over salad greens; toss to coat.
