Ingredients
Serves 4- 1 tablespoon tomato puree (paste)
- 1 teaspoon olive oil
- ½ teaspoon dried oregano
- ¼ teaspoon dried oregano
- 2 spring onions (scallions) (sliced)
- 3 tablespoons tomato ketchup
- 4 cherry tomatoes (sliced)
- 6 slices pepperoni (quartered)
- 150 g (1 ½ packed cups) grated mixed cheese ((I use a mixture of cheddar, mozzarella and red Leicester))
- ¼ teaspoon garlic powder
- 4 thick slices of bread (I like to use sourdough or tiger bread for a crispier crust)
Open in Supper to scale servings and turn this into a grocery list.
Steps
- Step 1
Lightly toast the bread on both sides under the grill (broiler).
- Step 2
Mix together the tomato puree, tomato ketchup, olive oil, oregano and garlic powder in a small bowl.
- Step 3
Top the toast slices with the sauce and spread to the edges.
- Step 4
Sprinkle on the grated cheese, then arrange the tomato slices and pepperoni pieces on top.
- Step 5
Place back under the grill (broiler) on a high heat, until the cheese is melted and bubbling (about 3-5 minutes).
- Step 6
Serve topped with a sprinkling of dried oregano and spring onions.
