Ingredients
Serves 8- 1 teaspoon fresh lemon juice ((optional but brightens flavor))
- Optional garnish: fresh parsley
- ½ cup slivered almonds
- ¼ cup chicken broth or milk
- 2 (10.5 ounce) cans condensed cream of chicken soup, (not diluted)
- 5 cups cooked, shredded chicken
- 1 cup (8 ounces) sour cream
- Optional: ½ cup shredded cheddar cheese
- ½ teaspoon garlic powder
- Kosher salt and ground black pepper, (to taste)
- 12 tablespoons (1 ½ sticks) butter, (melted)
- 2 sleeves Ritz crackers (about 60 crackers), (crushed )
- 2 teaspoons poppy seeds

Steps
- Step 1
Preheat the oven to 350°F. In a large bowl, whisk together the sour cream, condensed soup, broth (or milk), poppy seeds, lemon juice, and garlic powder. Stir in the chicken and slivered almonds. Taste and season with salt and pepper, if desired.
- Step 2
Transfer the chicken mixture to a greased 9 x 13-inch baking dish. Top with shredded cheese, if desired.
- Step 3
In a small bowl, combine the Ritz crackers and the melted butter. Add the buttered cracker crumbs to the top of the casserole.
- Step 4
Bake uncovered until the filling is hot and bubbly, about 20-25 minutes.
- Step 5
Garnish with fresh parsley and serve.
