Ingredients
Serves 8- 1 (10.75 ounce) can condensed cream of mushroom soup
- Optional garnish: chopped fresh parsley
- 1 (10.75 ounce) can condensed cream of chicken soup
- 1 cup reduced sodium chicken broth
- 5-6 cups cooked, shredded chicken ((from 1 large rotisserie chicken or 2 smaller chickens))
- 1 cup grated sharp cheddar cheese
- 1 cup sour cream
- 1 ½ sticks (12 tablespoons) butter, (melted)
- 2 sleeves Ritz crackers, (coarsely crushed (about 60 crackers total))

Steps
- Step 1
Preheat the oven to 350°F. In a large bowl, whisk together the condensed soups, sour cream, and chicken broth.
- Step 2
Add the chicken and stir to combine.
- Step 3
Transfer the chicken mixture to a greased 9 x 13-inch baking dish. Sprinkle the cheese on top.
- Step 4
In a small bowl, combine the Ritz crackers and the melted butter. Add the buttered cracker crumbs to the top of the casserole.
- Step 5
Bake, uncovered, for 20-25 minutes, or until the filling is hot and bubbly, the cheese is melted, and the cracker topping is browned.
- Step 6
Garnish with fresh parsley and serve.
