Ingredients
Serves 5- 1 cup diced zucchini ((about 1 small zucchini))
- 1 cup halved grape tomatoes
- 1 tablespoon apple cider vinegar
- ½ cup diced celery
- ½ cup diced sweet bell pepper ((any color is fine))
- ¼ cup diced red onion
- 2 cups corn kernels ((fresh or frozen, thawed is fine))
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon honey
- 1 teaspoon kosher salt
- Ground black pepper, (to taste)

Steps
- Step 1
If you're starting with fresh corn, boil or steam until tender, about 3-5 minutes. If starting with frozen corn, thaw, drain, and let stand until it comes to room temperature.
- Step 2
Combine all dressing ingredients in a jar. Cover with lid and shake until completely combined. Set aside.
- Step 3
Place all of the vegetables in a large bowl.
- Step 4
Pour dressing over top and gently toss to coat.
- Step 5
Cover and refrigerate until ready to serve.
